Sundae Korean Blood Sausage

Sundae is a popular street food in the Korean peninsula. It is available in many variants. As a matter of fact, there is a neighborhood in Sillim-dong, Seoul in South Korea that is called Sundae Town. The neighborhood has many restaurants dedicated to sundae. Sundae is also sometimes spelled Soondae.



Sundae is a kind of blood sausage that had been eaten for so long in Korea. This Korean dish is made from pig or cow’s intestines that are stuffed with different ingredients.

Ingredients:

  • Pig’s intestines
  • 2 cups of pork blood
  • ½ cup barley
  • ½ cup glutinous rice or sticky rice
  • ½ cup soybean sprouts
  • 1 cup chopped Kimchi or fermented vegetable dishes (cabbage, radish, cucumber) 
  • 1 cup cellophane noodles/ Dangmyeon cut into pieces



  • Chopped Perilla leaves



  • Chopped scallion or spring onion



  • Fermented soybean paste or Doenjang





Procedure:

  • Mix all the ingredients in a bowl until sticky enough except for the pork intestine.
  • Using a funnel, insert the mixture into the intestine with the other end tied up.
  • It can be cook in two ways – boiling or steaming.
  • Boil or steam the stuffed intestine for 45 minutes to 1 hour,
  • Dish out, sliced into pieces and serve.
