Czernina Zupa or Duck Blood Soup: Exotic Polish Food


Poland is a historic European country. It is the birthplace of Pope John Paul II, one of the most travelled and well-loved Pope in history.

If you visit Poland don’t forget to try Czernina or Duck Blood Soup. This Polish soup is made of duck blood and clear poultry broth. The name of this food recipe is from “czarny” which means black. It is also sometimes called Czarnina or Czarna polewka. 




Ingredients:
  • 1 whole duck
  • 1 cup of duck’s blood
  • Plum or pear syrup
  • Dried pears, plums or cherries
  • Apple vinegar
  • Honey
  • Salt and pepper
  • Water
  • Raisin
  • Celery stalk
  • Parsley
  • Allspice
  • Noodles/macaroni

Procedure:
  • Cover whole duck with water in large stock pot. Add salt, and bring to a boil.
  • Place allspice, celery, cloves and parsley in a cheese cloth bag, and add to stock pot.
  • Cover and cook over low heat until meat is tender, approximately 1 ½ hours.
  • Remove cheese cloth bag from stock pot. Dish out duck and remove the bones. Cut the met into pieces and return to the broth.
  • Add plum or pear syrup, dried pears, plums or cherries, raisin and honey then simmer for 30 minutes.
  • Add noodles or macaroni and pour in the duck’s blood mixing thoroughly.
  • Season to taste with salt, pepper and apple vinegar

Czernina is usually served with kluski, macaroni, fine noodles, boiled potatoes, or dumplings. There are hundreds of ways in cooking this recipe which is popular in different parts of Poland. This sweet and sour tasting recipe is also popular in Lithuania. It is also a regional dish in Kashubia and Poznan.

Note: Hen, Rabbit or Pig blood can also be used.
